小磨麻油

小磨香油是指用水代法加工製取,香味更濃、更純。水代法加工製取的小磨香油在中國已有1600多年的歷史。傳統生產工藝為:選料、清洗、炒籽、磨漿、攪拌、振盪、沉澱、撇油、包裝。
香油按製作方法分為小磨香油和機榨香油,小磨香油因香氣撲鼻、香味濃郁誘人而得名。因以芝麻為原料,故稱“芝麻油”“麻油”。古人把芝麻叫做“胡麻”“脂麻”,稱芝麻油便是“胡麻油”“脂麻油”。[1]香油堪稱油類之上品,人們把芝麻尊稱為“油料作物皇后”,把芝麻油尊稱為“植物油脂國王”。

古月粉

胡椒粉(hú jiāo fěn),亦稱古月粉,由熱帶植物胡椒樹的果實碾壓而成,主要產在印度越南、印尼、泰國新加坡等國,中國廣東省海南島也有生產。
胡椒是海南最著名的特產之一,它既是一種很好的調味品,又是一種珍貴的藥材。胡椒粉可藥、食兩用,中醫學稱胡椒有温胃散寒之功能。食法主要有直接食用胡椒粉。胡椒粉又是世界上主要調味香料,果實中含有揮發性油1-2%,胡椒鹼8-9%,還含有粗脂肪、蛋白質、澱粉、可溶性氮等物質。胡椒粉含有的特殊成分使胡椒具有特有的芳香味道,還有苦辣味,成為百姓歡迎的具有辣味的調味品。雖然胡椒主要用作調味品,但實際上用途還有很多。如:民間用“胡椒燉豬肚”治療慢性胃腸病。

梘水

梘(jian)水,也稱鹼水,或稱食用梘水,是一種復配食品添加劑,是食品工藝中的材料,廣式糕點常見的傳統輔料。

洋喼汁

喼汁的英文叫Worcester Shire Sauce(不知道中文是不是應該譯成伍斯特郡汁),譯名源自catsup,cat是貓貓,sup是啜,就是味道好,吃的人像貓啜一樣,很早以前從英國引入香港,然後傳入廣州,“喼”還是專門為這種調味品發明的粵語方言,傳統的廣東人一定都知道這種調味料。喼汁的味道有點像醋,可是比醋好吃。

浙醋

浙醋,又稱大紅浙醋,是一種起源於中國浙江的食醋,色澤紅潤。浙醋是使用糯米釀制,並加入了紅米麴增添色彩。不少人在吃魚翅羹時,都會加入少許浙醋中和魚翅的腥味。另外香港人亦有在小籠包、鍋貼、蛇羮、碗仔翅等加入浙醋調味。

腐乳

腐乳豆腐乳,又因地而異稱為乳腐齋燒鵝廣東中國計劃經濟時期而開始有的別名)、貓乳豆乳[1]霉豆腐酱豆腐糟豆腐(形如酒糟醃漬),是一種將豆腐利用黴菌發酵、醃製、並二次加工的豆製品,為東亞飲食的常見佐料。腐乳在中國大陸香港台灣琉球東南亞均有生產,但色澤與味道因地方做法不同而有所差異。如蘇州的豆腐乳呈黃白色,口味相對細膩;北京红方呈紅色,偏甜;廣東南乳也呈紅色,然而口味偏鹹和微辣;四川的腐乳則更為辛辣。
